Jam-Filled Cookies Recipe (Mashhadi Cookies) 🍪✨

Ingredients:
- Flour: 2.5 cups (about 300g)
- Butter or margarine: 150g (softened at room temperature)
- Powdered sugar: ½ cup (about 75g)
- Egg: 1
- Vanilla extract: ½ teaspoon
- Baking powder: 1 teaspoon
- Cornstarch (optional): 3 tablespoons
- Jam or marmalade of choice: as needed (raspberry, strawberry, or apricot work great)
How to Make Mashhad Jam Sweets (Mashhadi Cookies):
1️⃣ Prepare the Dough: Beat the softened butter and powdered sugar with an electric mixer until light and creamy. Then add the egg yolk and vanilla extract and mix well.
2️⃣ Add Dry Ingredients: Gradually add the flour, baking powder, and cornstarch, mixing with a spatula first, then knead with your hands until a soft, non-sticky dough forms.
3️⃣ Chill the Dough: Wrap the dough in plastic wrap and refrigerate for 30 minutes.
4️⃣ Roll & Cut: Roll out the dough on a floured surface to about 3mm thickness. Cut into shapes using cookie cutters. For half of the cookies, cut out a small circle in the center.
5️⃣ Bake: Place the cookies on a baking tray and bake in a preheated oven at 175°C (347°F) for 13-15 minutes until lightly golden.
6️⃣ Fill with Jam: Once cooled, spread jam on the whole cookies and place the cut-out cookies on top.
7️⃣ Decorate: Sprinkle powdered sugar over the cookies or drizzle with melted chocolate. You can also garnish with coconut powder, pistachio powder, or dried rose petals for extra flavor and beauty.

- If you don’t have an oven, you can bake these cookies in a covered pan over low heat.
